Azkaldereta (Mongrel Kaldereta)


Something caught our eye in the covered market. Kalding!

Briefly marinate in apple cider vinegar, garlic, pepper.

The usual suspects plus bay leaves and ardennes pate (to replace Reno liver spread)

Waiting patiently for de goat.

Stir fry de goat.

The usual suspects then add goat and stock.

Parboil the potatoes.

Bruise the parboiled taters and lay in oven dish.

Roast taters to a crisp.

Parmigiano Reggiano and grana padano to replace Eden cheese.

Siling labuyo for good luck.

Parmigiano into the stew.

Roast taters ready to go.

Mmmm.

Mmmmm.

Mmmmm.

Mmmmm.
