Butter Chicken ti Igorot Photo Dump


Skin-on chicken with yoghurt, kashmiri chili, garlic, ginger, garam masala, cumin. The usual suspects.

Mix with hands and marinate.

Lots of ghee (it's butter chicken, innit?), onion, garlic, cumin, chili, fenugreek seeds, fenugreek leaves,

Add tomatoes and almonds. Cook and simmer.

Blend to a smooth paste.

Strain.

Fry marinated chicken in lots of ghee

Get that maillard reaction going. Then add the sauce and simmer.

Usual masala stir fry with peas and add crumbled paneer.

Peppers

Fill with paneer mix and grill!

Homemade butter chicken garnished with coriander. It was creamy enough from the butter and almonds, didn't add cream this time.

Grilled paneer stuffed peppers.

Add mango lassi, roti and raita. There's no need to make the roti yourself if there's actually someone with a mud oven nearby making them.
