Igorot Kiangan-Maranao French Fusion Dish.


Kiangan because it has lots of chilis. Maranao because of the gata, toasted coconut, tanglad, and turmeric. French because the Maillard reaction was done in Isigny butter and the dish was finished with Breton cream.  

Shrimp Ceviche


Shrimp (deshelled, deveined), Brasilian lime, Indian Onions, Thai chilis, black salt, coriander.

Marinated for 20 minutes.
